Zucchini Bread (Tastes like homemade spice cake!)

3 cups flour
1 cup oil
3 teaspoon Cinnamon
2 cups grated Zucchini (raw)
2 cups sugar
3 eggs
1 teaspoon vanilla
Nuts (optional)

Preheat oven to 350. Mix all dry ingredients, then add the rest and mix well. (Stir in nuts if desired.) Pour in a greased and floured oblong cake pan. Bake until done with toothpick test. Just like baking a cake with the same amount of time. Cut into squares when half-way cooled. Serve warm or cooled. Recipe submitted by: Libby
