Pig-Lickin' Cake
1-yellow cake mix
2-cans Mandarin oranges
1/3-cup oil
3-eggs
1-12oz. Cool Whip
1-can crushed Pineapples
2-small boxes vanilla instant pudding mix
In large bowl, add yellow cake mix, eggs, and oil. Drain juice from Mandarin oranges in measuring cup, than add water to the juice to get 1-1/3 cup, add to bowl mixture. Mix all ingredients in bowl well. Carefully spoon in Mandarin oranges and pour into a well greased and floured 9x12x2 pan. Bake at 400 first 15 minutes, reduce heat to 300 and bake until done with toothpick test.
While cake is baking, mix slightly softened cool whip with pudding. Stir in pineapples (juice included) and mix well. This is cake topping, chill and keep in frige. When serving cake, top with generous amount of topping. Recipe submitted by: Libby
